Molten Lava Love

February is full of fun and decadent treats that are enjoyable for adults and kids alike, and we have an extra special treat from Chef Megan Alig of Creative Cuisine! Chef Megan has shared her molten lava cake recipe with us, and it is one you need to create as soon as possible...trust us. While Chef Megan is often offering her private chef services for in-house get-togethers for groups ranging from 2 to 50, she also knows what makes the perfect end to a long day, a sweet surprise for your date night in, or the highlight of a fun afternoon with the kiddos. Surprisingly straightforward, these molten lava cakes are sure to hit the spot. So why wait? Let's head to the kitchen!

Molten Lava Cakes

Ingredients 

1/2 cup salted butter

6 oz. bittersweet chocolate

2 eggs

2 egg yolks

1/4 cup sugar

1 pinch salt

2 tbsp flour

Directions

Chop six ounces of semisweet chocolate, then transfer it and the butter to a pot; heat on low. Stir chocolate and butter until smooth. Whisk two eggs and two yolks with a pinch of salt, then add 1/4 cup of sugar and mix in a stand mixer until it has a light yellow color and becomes thicker in texture. Fold in the chocolate. Add flour and mix in. Transfer the batter to buttered and floured ramekins. Bake at 450°F for six to eight minutes. Baking time will depend on the size of the ramekins you use. Let them sit for a minute before transferring them to a dessert plate. Sift with powdered sugar and add fruit or whipped cream. Recipe makes six cakes.
