When most people think of exploration, they picture lots of gear, a road trip, or maybe a trail they’ve never hiked before. But adventure can be as simple as trying a new recipe, inviting friends over on a random weeknight, or slowing down long enough to enjoy a summer evening on the porch.
This Watermelon Mojito feels like the cocktail version of summer spontaneity. It’s light, refreshing, and just unexpected enough to feel a little special without being fussy. Think classic mojito vibes, but with a juicy watermelon twist that tastes like sunshine in a glass.
The fresh mint and lime keep things crisp; the watermelon adds just the right amount of sweetness; and a splash of club soda makes it perfect for those long Texas evenings when it’s somehow still 92 degrees at sunset. It’s the kind of drink that feels equally at home next to a backyard burger spread, a charcuterie board with friends, or enjoyed solo after a long day when you simply need a moment to exhale.
Summer has a way of making us divert from the ordinary and seek out a little fun. Before you go all in on planning a weekend getaway, say yes to hosting the neighbors for happy hour and mixing up something new. You won’t be disappointed!
Consider it your gentle reminder that exploration doesn’t always have to be big. It can start with saying, Why not try something new?
Watermelon Mojito
Ingredients:
2 ounces white rum
½ ounce lime juice
½ ounce simple syrup
1½ ounces fresh watermelon juice
6 to 8 fresh mint leaves
Club soda
Lime wedge and fresh mint bundle for garnish
Directions:
1. Add the rum, lime juice, simple syrup, watermelon juice, and mint leaves to a shaker with ice.
2. Shake for about 20 seconds until chilled and fragrant.
3. Pour everything into a Collins glass—yes, mint leaves and all! (This is called a dirty pour and it keeps all that flavor in the glass.)
4. Top with club soda, add more ice if needed, and garnish with a lime wedge and fresh mint bundle.
Then sit back, take a sip, and toast to wherever this season of exploration takes you.
